Southern Style Gumbo
½ cup of vegetable oil
½ cup of flour
In a large heavy pot on medium heat whisk together oil and flour to make a roux. You will cook the mixture, stirring constantly until it is a light brown color. Be careful not to burn the mixture.
4 cups of chicken broth
2 cups of water
½ cup of celery sliced thin
½ cup of chopped green bell pepper
1 cup of diced yellow onion
1 bay leaf
2 tablespoons of Cajun Creole seasoning
1 tablespoon of Italian seasoning
1 tablespoon of sugar
1 – 1 ½ pounds of shredded cooked chicken
1 pound of sausage sliced into pieces
Add all of these ingredients to the large pot with the roux and stir well. Turn the heat up and bring the pot to a full boil, stirring often. Once the pot reaches a boil, reduce the heat to medium-low and simmer for 30 to 40 minutes. The longer you simmer the Gumbo the more flavorful it will be.
